The first two recipes are cakes that I make all year round. They’re seriously the best cakes on the planet. One is a banana cake and one is a carrot cake, and they both have cream cheese frosting. The banana cake recipe has 2x as much frosting as the carrot cake, so feel free to swap the frosting recipes between the two cakes if you prefer more or less frosting.
You bake both of them in a 9×13 pan so they’ll feed a crowd. However, even at home, with a small family, these cakes won’t last long. Our family of 4 will polish off one of these cakes in a couple of days because they’re so good we just can’t stop ourselves.
Crazy Banana Cake with Cream Cheese Icing: The way you bake and cool it IS crazy, but that’s why it’s one of the best banana cakes you’ll ever taste!
Crazy-Good Carrot Cake: Yes, it IS crazy-good. Quite possibly the best carrot cake you’ll ever taste. It’s so dense, moist and full of flavour. My guys and their friends once polished off an entire 9×13 pan in about 15 minutes while they were playing road hockey in the drive-way. Gone in a flash.
The next two cakes are great for spring and summer entertaining when fresh like rhubarb and blueberries are available.
This Rhubarb Scratch Cake is amazing in the spring when the rhubarb patch is bursting with fruit.
