Candy Bar Cookie Recipe

If you love candy bars AND cookies, this Giant Candy Bar Cookie “pie” is a great alternative to a birthday cake, and a terrific way to use up leftover Halloween candy. Easy to make in one pan, just nestle your favourite candy bars into a crust of prepackaged cookie dough, top it with chocolate chip cookie dough and pop it in the oven! Super-easy and so delicious!

We are huge fans of over-sized cookies here at our house; I often make this giant chocolate chip cookie pizza instead of a birthday cake for my boys’ birthdays.

The candy bar cookie I’m sharing today is another great giant cookie that just about any kid (or adult) will love.

We’re calling this creation the Minions candy bar cookie because we used Pillsbury’s Minions cookie dough, and we’re calling it a “pie” because there are 3 layers. A sugar cookie base, a chocolate bar middle and a chocolate chip cookie “crust”. Don’t worry. It’s a really easy recipe.

To give credit where credit is due, the inspiration for this pan of Minion candy-cookie awesome-ness was Picky Palate’s Skillet-Baked Candy-Bar, Stuffed, Double Cookie.

One of my daycare moms recently made her own version of it for her son’s birthday.

FUN FACT:  The birthday boy’s name is Will, and for years, when he was young, we all called him “Willy Wonka”.  How fitting that his birthday dessert this year is this wonderful, candy-filled creation that would make Roald Dahl’s Willy Wonka proud.

Ok.  Let’s get baking!

Candy Bar Cookie Recipe:

Supplies and Ingredients:

  • Spring-form Pan
  • Candy Bars
  • 8 tbsp soft butter (1 stick)
  • 1/2 cup white sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  •  1 tsp vanilla
  • 1.5 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 and 1/4 cups chocolate chips

How to Make a Giant Candy Bar Cookie:

The base:

For the base of this dessert, you’ll need one roll or package of Pillsbury’s sugar cookie dough.  As I said, we used Minion’s sugar cookie dough but you can use Pillsbury’s regular sugar cookie dough too. Look for it in the refrigerator aisle of your grocery store.

Press the cookies together in the bottom of your spring-form pan.

If you’re using cookies with a print on them, place them printed-side-down so you’ll the prints when you

Make sure the best printed side of the cookie is facing DOWN because that’s what you’ll see when you take them out of the pan.

The candy bar middle layer:

Note: Will’s mom used full-sized candy bars but you can also use bite-size Halloween chocolate bars.

She cut up a combination of  Mars Bars, Snickers, Peanut Butter Cups, Kit Kat and Twix, and scattered them over the cookie base.

Of course, you could use whatever chocolate treats you have on hand – Aero, Rolo, Jersey Milk, Wonderbar etc.

Top Layer:

  • Cream butter and sugars together in a large bowl until fluffy

  • Add egg and vanilla, and beat until well-combined.

  • Stir in flour, salt and baking soda.

  • Add chips and stir until well-mixed.

  • Press this dough over the layer of candy bars.

Bake for 25-35 minutes, until golden brown.

Allow to cool before slicing your candy bar cookie into wedges.

Pillsbury always puts out holiday-themed, pre-cut cookies, so I imagine you could make one of these candy-bar cookies for  just about any occasion!
