Easy 4-Ingredient Christmas Bark – Happy Hooligans

This delicious, 4-INGREDIENT WHITE CHRISTMAS BARK recipe makes Christmas baking easy. Made with Mercken’s Disks and Rice Krispies, it’s terrific for bake sales, teacher’s gifts and holiday entertaining!

I’ve been making a similar version of this festive white bark with regular Rice Krispies for years, but this year I switched things up a bit and I used Holiday Rice Krispies to make it look a little more festive.

And instead of reserving some of the ingredients for the top layer, I mixed everything together, which made the recipe easier than ever, but just as tasty as always.

The “easy” part is one of the things I love most about this bark!  You make it with just 4-ingredients and you don’t even have to turn the oven on.  That’s my kind of Christmas baking. 🙂

I’m always amazed when something this simple tastes SO good.

This bark is crispy-crunchy and smooth and creamy all at the same time, and toasting some of the ingredients before-hand gives it a rich, nutty flavour.

Honestly, I’ve never met anyone who doesn’t love this bark!

Let me show you to make it.

Ingredients

  • 3 cups white Mercken’s candy disks (I buy mine at the bulk store)
  • 1 cup flaked coconut, toasted
  • 1 cup slivered or chopped almonds, toasted
  • 2 cups Holiday Rice Krispies
  • Baking sheet
  • Wax Paper

How to Make Easy White Christmas Bark

Begin by toasting your almonds and coconut.  Toast them separately because one may brown more quickly than the other.

How to toast coconut and almonds:

Place your almonds and coconut in a pan over medium heat, stirring frequently once they start to sizzle.

Once they start to brown, they’ll continue to do so very quickly, so keep stirring and don’t take your eyes off them.

As soon as they’re nice and toasty-brown, remove them from the heat, and transfer them to a bowl to stop the cooking process.

Melt your Merckens disks.

Measure your disks into a large, microwave-safe bowl, and microwave on high heat in 30-second increments until the disks have melted.

Stir well after each 30-second session. Note: you could use a double-boiler for this process.

Putting it all together:

When your Merckens disks are fully melted, stir in Rice Krispies, almonds and coconut.

Stir well, and turn it all out onto a baking sheet lined with waxed paper.

Spread the bark into a 1/4 inch layer, and refrigerate until it’s set.
